★菊花魚,酸甜汁 一 簡單做法 ★ | Sweet and Sour Fish Easy Recipe

大家好,今日為大家介紹《菊花魚》,<酸甜汁>

材料:
二百克鯇魚肉
六十克粟粉

Ingredients:
200g Grass carp fillet
60g corn starch

酸甜汁
兩湯匙茄醬
一茶匙茄膏
一茶匙喼汁
四湯匙醋
兩湯匙糖
四分一茶匙雞粉
少許胡椒粉
半茶匙鹽

Sweet and sour sauce ingredients:
2tbsp tomato ketchup
1tsp tomato puree
1tsp Worcester sauce
4tbsp vinegar
2tbsp sugar
1/4tsp chicken powder
some ground black pepper
1/2tsp salt

做法:
粟粉要加入半茶匙胡椒粉和半茶匙鹽. 切魚肉時刀要平切, 不要𠝹斷,小心手,以免受傷. 當切了五片便切開,一抽五片, 將魚片切條狀. 將粟粉佈滿魚塊. 準備半鍋生油,用小魚塊試試油溫, 當小魚塊浮面時,油溫便可以了. 將魚皮對摺,用筷子夾實,魚塊放入油裡. 輕輕移動魚塊,炸至魚肉硬身才將筷子鬆開, 這樣魚塊才形成菊花形狀. 魚塊要一塊一塊炸,否則它會不成形. 當魚塊炸成微黃色便取出,放在廚房紙吸油. 將酸甜汁放在鍋子,煮溶砂糖,準備用來點魚塊.

★電飯煲粉絲蝦米 一 簡單做法 ★ | Rice Cooker Vermicelli Easy Recipe

今天我為大家介紹一道簡單易做的餸菜<粉絲蝦米肉絲煮黃芽白>



材料
一磅旺菜或黃芽白
六十克粉絲(浸腍)
四隻冬菇(浸腍後切絲)
一百克豬肉
三十克蝦米(浸腍)

Ingredients:
1lb Peking cabbage (Chinese leaf)
60g Bean vermicelli (soaked)
4 Shiitake mushrooms (soaked and sliced)
100g pork
30g Dried shrimp (soaked)

做法:
清洗旺菜後切絲, 豬肉切薄片後切絲. 醃豬肉用半茶匙生抽,半茶匙糖,少許胡椒粉. 攪勻後加入半茶匙生粉. 攪勻後加入半茶匙麻油,醃三至四分鐘. 將一碗滾水放入飯煲,開著飯煲. 將冬菇蝦米放入飯煲, 搇蓋。當見到有蒸氣時,煮多兩分鐘後,打開蓋. 將肉絲鬆開後放入飯煲, 搇蓋。當見到有蒸氣時,煮多一分鐘後,打開蓋, 將菜絲放入飯煲,加半茶匙鹽,半茶匙雞粉,攪勻, 搇蓋。當見到有蒸氣時,煮多兩分鐘後,打開蓋, 將粉絲放入飯煲,搇蓋。當見到有蒸氣時,煮多一分鐘後, 打開蓋,加少許麻油,攪勻, 《粉絲蝦米肉絲煮黃芽白》便完成了.

★苦瓜排骨湯 一 簡單做法 ★ | Bitter Melon Soup Easy Recipe

大家好,今天我介紹《苦瓜黃豆排骨湯》,很適合夏天吃:




材料
一百克黃豆
兩塊潮州鹹酸菜
四粒浸發了的瑤柱
四個浸發了的冬菇
一斤肉排
三斤苦瓜
一大個蒜頭去衣

Ingredients:
100g Soya bean
2 pieces of Chiuchow pickled vegetables
4 conpoy
4 shiitake mushrooms
600g pork ribs
1.8kg bitter melon
1 buld of garlic

黃豆浸數小時至透心. 將苦瓜清洗後開邊,去瓤,斜切切件. 冬菇斜切切件. 鹹酸菜都是斜切切件. 排骨出水兩分鐘後沖洗,備用. 苦瓜出水一分鐘後過冷河,備用. 用兩湯匙生油炸蒜頭至金黃色, 炸好了的蒜頭取出備用. 用一茶匙油炒鹹酸菜,令它出味. 煲滾三公升水,將冬菇,黃豆,排骨,瑤柱放入鍋子裡. 大火煲滾後轉中小火,煮多一小時. 一小時後,放入鹹酸菜,炸好了的蒜頭和苦瓜, 大火煲滾後轉中小火,煮多十八分鐘, 《苦瓜黃豆排骨湯》便完成了.

Soak the soya bean for several hours. Slice the bitter melon in half, remove the pits and cut into slices.  Slice the shiitake mushrooms and pickled vegetables.  Blanche the ribs for 2 minutes and wash under a running tap.  Blanche the bitter melon for 1 minute then place in a bowl of icy water.  Deep dry the garlic to golden brown and stir fry the pickled vegetable for 1 minute.  Place 3 litre of water in a pot, bring it to boil before adding the shiitake mushrooms, soya bean, ribs and conpoy.  Bring it to boil then turn to med low heat, cook for 1 hour before adding in the pickled vegetables, garlic and bitter melon.  Bring it to boil again, then cook for another 18 minutes in med low heat.  Bitter melon soup is then ready to be served.

★ 電飯煲煮菜飯 一 簡單做法 ★ | Ricecooker Vegetable Rice Easy Recipe

大家好,今日介紹《菜飯》, 很適合「上班一族」和寄宿學生:
Hello.  I am making Rice Cooker Veggie rice, a great dish for busy people and college students.


材料:
一杯米
一杯水
一百三十克豬肉
三隻冬菇(切粒)
瑤柱
雜豆
芫荽葱
一百克白菜
半茶匙鹽
五毫升橄欖油

醃豬肉調味料:
兩茶匙生抽
半茶匙糖
半茶匙雞粉
少許胡椒粉
一茶匙粟粉
一茶匙麻油

Ingredients:
1 cup of rice
1 cup of water
130g pork/chicken
3 shiitake mushrooms (diced)
2 conpoy
1 small cup of mixed vegetables
Coriander and scallions
100g bok choi
1/2 tsp salt
5ml of olive oil (optional)

Pork marinade:
2 tsp oil
1/2 tsp sugar
1/2 tsp chicken powder
some ground pepper
1tsp corn starch
1tsp sesame oil

做法:
將豬肉切丁粒, 醃豬肉用兩茶匙生抽,半茶匙糖, 半茶匙雞粉, 少許胡椒粉,撈勻後落一茶匙粟粉. 再撈勻後落一茶匙麻油,醃十分鐘. 清洗米後放入飯煲,加一杯水(一比一份量), 加浸發好的瑤柱或蝦米,冬菇,撈勻. 加半茶匙鹽,搇蓋,開著飯煲. 清洗白菜,切粒( 約一寸長), 當飯煲出蒸氣的時候放入豬肉,將豬肉蓋上飯面, 搇蓋,收飯火後焗多五分鐘. 打開蓋, 將菜粒放進飯煲, 撈勻, 放入雜豆, 搇蓋,再開著飯煲煮多一次. 當飯煲制煮完熄了時,再讓它焗多十分鐘. 十分鐘後,打開蓋,可以加一茶匙橄欖油,令飯更加香滑. 吃菜飯時可加上芫荽葱,菜飯便完成了.

Summary:
Cut the pork into small pieces.  Marinate the pork with 2 tsp of soy sauce, 1/2 tsp sugar, 1/2 tsp chicken powder, some ground pepper, mix well then add 1 tsp of corn starch, mix again before adding 1 tsp of sesame oil.  Marinate for 10 minutes.  Meanwhile, wash the rice and place it into the rice cooker, add the same amount of water, shredded conpoy or dried shrimp, shiitake mushroom, 1/2 tsp of salt and mix well, cover with lid then turn the rice cooker on.  Wash the bok choi, and cut into 1 inch pieces.  When steam comes out of the rice cooker, open the lid and place the pork onto the rice, close the lid again and let it cook until the rice cooker switches itself off.  Wait for another 5 minutes before adding in the bok choi and mixed vegetables, mix well and turn the rice cooker back on and let it cook until it switches itself off.  Wait for 10 minutes before mixing in 1 tsp of olive oil (optional).  Before serving, sprinkle some finely chopped scallions and coriander on top of the rice.
