★ 冬瓜羹 一 簡單做法 ★ | Winter Melon Soup Easy Recipe

大家好,今日我介紹一個清熱消暑的食譜 <冬瓜羹>:





材料:
八隻中蝦切粒(用胡椒粉,麻油醃一醃)
一百二十克瘦肉切幼粒(用豉油,豆粉,糖,麻油醃一醃)
一百克草菇(出水後切粒)
浸發好的乾瑤柱,拆絲
一隻蛋,蛋白和蛋黃分開
一茶匙雞粉
鹽適量
一湯匙半馬蹄粉
一百毫克水
半條煮熟了的甘筍(切粒)
兩條蘆筍切薄片
一斤冬瓜
麻油 適量
芫茜(切幼粒)
蔥(切幼粒)

Ingredients:
8 Shrimps, diced (marintated with pepper and sesame oil)
120g lean pork, finely diced and marinated with soy sauce, starch, sugar and sesame oil)
100g straw mushrooms, diced
Rehydrated conpoy, shredded
1 egg, separate yolk from the egg
1 tsp chicken powder
Salt
1.5 tbsp Waterchestnut powder in 100ml water
1/2 Carrot, and boiled and chopped
2 Asparagus, finely sliced
600g Winter melon
Sesame oil
Finely chopped corriander and spring onion

將冬瓜切皮,切走冬瓜瓤,將冬瓜刨成幼絲, 將冬瓜蓉放入煲,加入八百毫升水,瑤柱絲冬瓜皮. 大火煲滾後轉中火,煲十五分鐘. 將冬瓜皮取出.放一湯殼湯攪開肉粒後放入煲, 煮滾後除去湯面的泡沫. 再加蝦粒,草菇粒,甘筍粒,蘆筍粒. 試味後,加入適量馬蹄粉水(視乎杰度), 加入蛋黃漿和蛋白,慢慢攪勻,熄火. 加入少量麻油,芫茜蔥粒.冬瓜羹便完成了.
