材料:

半條煮熟了的甘筍(切粒)
兩條蘆筍切薄片
一斤冬瓜

芫茜(切幼粒)

600g Winter melon

將冬瓜切皮,切走冬瓜瓤,將冬瓜刨成幼絲, 將冬瓜蓉放入煲,加入八百毫升水,瑤柱絲和冬瓜皮. 大火煲滾後轉中火,煲十五分鐘. 將冬瓜皮取出.放一湯殼湯攪開肉粒後放入煲, 煮滾後除去湯面的泡沫. 再加蝦粒,草菇粒,甘筍粒,蘆筍粒. 試味後,加入適量馬蹄粉水(視乎杰度), 加入蛋黃漿和蛋白,慢慢攪勻,熄火. 加入少量麻油,芫茜蔥粒.冬瓜羹便完成了.
