★苦瓜排骨湯 一 簡單做法 ★ | Bitter Melon Soup Easy Recipe

大家好,今天我介紹《苦瓜黃豆排骨湯》,很適合夏天吃:




材料
一百克黃豆
兩塊潮州鹹酸菜
四粒浸發了的瑤柱
四個浸發了的冬菇
一斤肉排
三斤苦瓜
一大個蒜頭去衣

Ingredients:
100g Soya bean
2 pieces of Chiuchow pickled vegetables
4 conpoy
4 shiitake mushrooms
600g pork ribs
1.8kg bitter melon
1 buld of garlic

黃豆浸數小時至透心. 將苦瓜清洗後開邊,去瓤,斜切切件. 冬菇斜切切件. 鹹酸菜都是斜切切件. 排骨出水兩分鐘後沖洗,備用. 苦瓜出水一分鐘後過冷河,備用. 用兩湯匙生油炸蒜頭至金黃色, 炸好了的蒜頭取出備用. 用一茶匙油炒鹹酸菜,令它出味. 煲滾三公升水,將冬菇,黃豆,排骨,瑤柱放入鍋子裡. 大火煲滾後轉中小火,煮多一小時. 一小時後,放入鹹酸菜,炸好了的蒜頭和苦瓜, 大火煲滾後轉中小火,煮多十八分鐘, 《苦瓜黃豆排骨湯》便完成了.

Soak the soya bean for several hours. Slice the bitter melon in half, remove the pits and cut into slices.  Slice the shiitake mushrooms and pickled vegetables.  Blanche the ribs for 2 minutes and wash under a running tap.  Blanche the bitter melon for 1 minute then place in a bowl of icy water.  Deep dry the garlic to golden brown and stir fry the pickled vegetable for 1 minute.  Place 3 litre of water in a pot, bring it to boil before adding the shiitake mushrooms, soya bean, ribs and conpoy.  Bring it to boil then turn to med low heat, cook for 1 hour before adding in the pickled vegetables, garlic and bitter melon.  Bring it to boil again, then cook for another 18 minutes in med low heat.  Bitter melon soup is then ready to be served.
