★ 回鍋肉 一 簡單做法 ★ | Twice Cooked Pork Easy Recipe

大家好,今日為大家介紹《回鍋肉》,送飯一流:





材料:
十兩豬肉
頭竹筍片
幾塊青瓜襯色(不是必要的)
四隻鮮冬菇,切片
半個洋蔥切片
四粒蒜頭切片
四片薑片
一湯匙磨豉醬
一湯匙蒜蓉豆瓣醬
四粒八角
一湯匙花椒
八隻辣椒乾(洗淨切段去籽)
老抽
一湯匙花雕酒

Ingredients:
360g pork
1 can of bamboo shoots
some chopped cucumber (optional)
4 shiitake mushooms, sliced
1/2 onion, sliced
4 cloves of garlic, sliced
4 slices of ginger
1tbsp ground bean sauce
1tbsp garlic chilli bean sauce
4 star anise
1tbsp hoajiao peppercorn
8 dried chilies (washed, deseeded and sliced)
1tsp dark soy sauce
1tsp sugar
1tbsp hoadiao Chinese wine

豬肉先洗淨,用鹽醃,蒸二十分鐘, 切闊面. 用一湯匙油煎香豬肉兩面至金黃色,取出備用. 將蒜頭,薑,冬菇,竹筍片一起爆炒兩分鐘後取出備用. 用乾淨鍋放一湯匙生油,用細火炒香花椒粒,炒半分鐘, 花椒粒取出,加入辣椒乾,炒半分鐘,炒香. 加入蒜蓉豆瓣醬,磨豉醬,爆香, 加入豬肉片,配菜. 加一茶匙糖,一茶匙老抽, 在鑊邊倒入一湯匙花雕酒. 加入蒸豬肉的水和多一碗水, 搇蓋,用中小火煮十分鐘. 打開蓋,加入青瓜(非必要),炒多半分鐘. 加少許麻油,試味,《回鍋肉》便完成了

大家好,今日為大家介紹一道簡單美味的菜式<螞蟻上樹>


材料:
一百克粉絲/冬粉
二百克豬肉碎
一湯匙薑米
一個紅蔥頭切碎
兩粒蒜頭切碎
兩湯匙豆瓣醬
一湯匙老抽
一茶匙糖
蔥粒
半茶匙雞粉
適量花椒油
適量水

Ingredients:
100g Cellophane noodles
200g minced pork
1tbsp finely chopped ginger
1 finely chopped shallot
2 cloved of garlic, finely chopped
2 tbsp chilli bean sauce
1tbsp dark soy sauce
1tsp sugar
finely chopped srping onion
1/2tsp chicken powder
some hoajiao peppercorn oil
some water

做法:
灼熟粉絲/冬粉後過冷河, 粉絲過了冷河變爽身,方便一會兒炒. 將粉絲/冬粉剪段,方便進食. 燒熱鍋,加一湯匙生油,爆香紅蔥頭後備用. 用中火爆香薑米,蒜粒,加入肉碎,炒散,加多一湯匙生油, 炒多一分鐘至熟透,加入豆,炒香. 加一茶匙花椒油,半碗水,煮出味. 加入糖,老抽,試味. 熄火,加入粉絲/冬粉,攪勻, 等粉絲吸收了肉汁後再開火,加入炒了的紅蔥頭,加一茶匙麻油,蔥粒

★菊花魚,酸甜汁 一 簡單做法 ★ | Sweet and Sour Fish Easy Recipe

大家好,今日為大家介紹《菊花魚》,<酸甜汁>

材料:
二百克鯇魚肉
六十克粟粉

Ingredients:
200g Grass carp fillet
60g corn starch

酸甜汁
兩湯匙茄醬
一茶匙茄膏
一茶匙喼汁
四湯匙醋
兩湯匙糖
四分一茶匙雞粉
少許胡椒粉
半茶匙鹽

Sweet and sour sauce ingredients:
2tbsp tomato ketchup
1tsp tomato puree
1tsp Worcester sauce
4tbsp vinegar
2tbsp sugar
1/4tsp chicken powder
some ground black pepper
1/2tsp salt

做法:
粟粉要加入半茶匙胡椒粉和半茶匙鹽. 切魚肉時刀要平切, 不要𠝹斷,小心手,以免受傷. 當切了五片便切開,一抽五片, 將魚片切條狀. 將粟粉佈滿魚塊. 準備半鍋生油,用小魚塊試試油溫, 當小魚塊浮面時,油溫便可以了. 將魚皮對摺,用筷子夾實,魚塊放入油裡. 輕輕移動魚塊,炸至魚肉硬身才將筷子鬆開, 這樣魚塊才形成菊花形狀. 魚塊要一塊一塊炸,否則它會不成形. 當魚塊炸成微黃色便取出,放在廚房紙吸油. 將酸甜汁放在鍋子,煮溶砂糖,準備用來點魚塊.

★電飯煲粉絲蝦米 一 簡單做法 ★ | Rice Cooker Vermicelli Easy Recipe

今天我為大家介紹一道簡單易做的餸菜<粉絲蝦米肉絲煮黃芽白>



材料
一磅旺菜或黃芽白
六十克粉絲(浸腍)
四隻冬菇(浸腍後切絲)
一百克豬肉
三十克蝦米(浸腍)

Ingredients:
1lb Peking cabbage (Chinese leaf)
60g Bean vermicelli (soaked)
4 Shiitake mushrooms (soaked and sliced)
100g pork
30g Dried shrimp (soaked)

做法:
清洗旺菜後切絲, 豬肉切薄片後切絲. 醃豬肉用半茶匙生抽,半茶匙糖,少許胡椒粉. 攪勻後加入半茶匙生粉. 攪勻後加入半茶匙麻油,醃三至四分鐘. 將一碗滾水放入飯煲,開著飯煲. 將冬菇蝦米放入飯煲, 搇蓋。當見到有蒸氣時,煮多兩分鐘後,打開蓋. 將肉絲鬆開後放入飯煲, 搇蓋。當見到有蒸氣時,煮多一分鐘後,打開蓋, 將菜絲放入飯煲,加半茶匙鹽,半茶匙雞粉,攪勻, 搇蓋。當見到有蒸氣時,煮多兩分鐘後,打開蓋, 將粉絲放入飯煲,搇蓋。當見到有蒸氣時,煮多一分鐘後, 打開蓋,加少許麻油,攪勻, 《粉絲蝦米肉絲煮黃芽白》便完成了.

★苦瓜排骨湯 一 簡單做法 ★ | Bitter Melon Soup Easy Recipe

大家好,今天我介紹《苦瓜黃豆排骨湯》,很適合夏天吃:




材料
一百克黃豆
兩塊潮州鹹酸菜
四粒浸發了的瑤柱
四個浸發了的冬菇
一斤肉排
三斤苦瓜
一大個蒜頭去衣

Ingredients:
100g Soya bean
2 pieces of Chiuchow pickled vegetables
4 conpoy
4 shiitake mushrooms
600g pork ribs
1.8kg bitter melon
1 buld of garlic

黃豆浸數小時至透心. 將苦瓜清洗後開邊,去瓤,斜切切件. 冬菇斜切切件. 鹹酸菜都是斜切切件. 排骨出水兩分鐘後沖洗,備用. 苦瓜出水一分鐘後過冷河,備用. 用兩湯匙生油炸蒜頭至金黃色, 炸好了的蒜頭取出備用. 用一茶匙油炒鹹酸菜,令它出味. 煲滾三公升水,將冬菇,黃豆,排骨,瑤柱放入鍋子裡. 大火煲滾後轉中小火,煮多一小時. 一小時後,放入鹹酸菜,炸好了的蒜頭和苦瓜, 大火煲滾後轉中小火,煮多十八分鐘, 《苦瓜黃豆排骨湯》便完成了.

Soak the soya bean for several hours. Slice the bitter melon in half, remove the pits and cut into slices.  Slice the shiitake mushrooms and pickled vegetables.  Blanche the ribs for 2 minutes and wash under a running tap.  Blanche the bitter melon for 1 minute then place in a bowl of icy water.  Deep dry the garlic to golden brown and stir fry the pickled vegetable for 1 minute.  Place 3 litre of water in a pot, bring it to boil before adding the shiitake mushrooms, soya bean, ribs and conpoy.  Bring it to boil then turn to med low heat, cook for 1 hour before adding in the pickled vegetables, garlic and bitter melon.  Bring it to boil again, then cook for another 18 minutes in med low heat.  Bitter melon soup is then ready to be served.

★ 電飯煲煮菜飯 一 簡單做法 ★ | Ricecooker Vegetable Rice Easy Recipe

大家好,今日介紹《菜飯》, 很適合「上班一族」和寄宿學生:
Hello.  I am making Rice Cooker Veggie rice, a great dish for busy people and college students.


材料:
一杯米
一杯水
一百三十克豬肉
三隻冬菇(切粒)
瑤柱
雜豆
芫荽葱
一百克白菜
半茶匙鹽
五毫升橄欖油

醃豬肉調味料:
兩茶匙生抽
半茶匙糖
半茶匙雞粉
少許胡椒粉
一茶匙粟粉
一茶匙麻油

Ingredients:
1 cup of rice
1 cup of water
130g pork/chicken
3 shiitake mushrooms (diced)
2 conpoy
1 small cup of mixed vegetables
Coriander and scallions
100g bok choi
1/2 tsp salt
5ml of olive oil (optional)

Pork marinade:
2 tsp oil
1/2 tsp sugar
1/2 tsp chicken powder
some ground pepper
1tsp corn starch
1tsp sesame oil

做法:
將豬肉切丁粒, 醃豬肉用兩茶匙生抽,半茶匙糖, 半茶匙雞粉, 少許胡椒粉,撈勻後落一茶匙粟粉. 再撈勻後落一茶匙麻油,醃十分鐘. 清洗米後放入飯煲,加一杯水(一比一份量), 加浸發好的瑤柱或蝦米,冬菇,撈勻. 加半茶匙鹽,搇蓋,開著飯煲. 清洗白菜,切粒( 約一寸長), 當飯煲出蒸氣的時候放入豬肉,將豬肉蓋上飯面, 搇蓋,收飯火後焗多五分鐘. 打開蓋, 將菜粒放進飯煲, 撈勻, 放入雜豆, 搇蓋,再開著飯煲煮多一次. 當飯煲制煮完熄了時,再讓它焗多十分鐘. 十分鐘後,打開蓋,可以加一茶匙橄欖油,令飯更加香滑. 吃菜飯時可加上芫荽葱,菜飯便完成了.

Summary:
Cut the pork into small pieces.  Marinate the pork with 2 tsp of soy sauce, 1/2 tsp sugar, 1/2 tsp chicken powder, some ground pepper, mix well then add 1 tsp of corn starch, mix again before adding 1 tsp of sesame oil.  Marinate for 10 minutes.  Meanwhile, wash the rice and place it into the rice cooker, add the same amount of water, shredded conpoy or dried shrimp, shiitake mushroom, 1/2 tsp of salt and mix well, cover with lid then turn the rice cooker on.  Wash the bok choi, and cut into 1 inch pieces.  When steam comes out of the rice cooker, open the lid and place the pork onto the rice, close the lid again and let it cook until the rice cooker switches itself off.  Wait for another 5 minutes before adding in the bok choi and mixed vegetables, mix well and turn the rice cooker back on and let it cook until it switches itself off.  Wait for 10 minutes before mixing in 1 tsp of olive oil (optional).  Before serving, sprinkle some finely chopped scallions and coriander on top of the rice.

★ 豆腐花 一 簡單做法 ★ | Tofu Pudding Dessert Easy Recipe

大家好,今日為大家介紹《豆腐花》




材料:
二百五十克黃豆(用水洗淨,然後用水浸過面,浸透黃豆(夏天浸四小時,冬天浸六小時))
茶匙食用的熟石膏粉
兩茶匙粟粉
二千四百毫升水
密身布袋

糖漿材料:
二百克冰糖
二百毫升水
一大片拍鬆薑

做法:
黃豆用水洗淨,然後用水浸過面,浸透黃豆(夏天浸四小時,冬天浸六小時). 將所有黃豆用二點四公升水用攪拌機打爛, 將打好了的豆漿倒入布袋隔豆渣, 扭緊袋口,防止豆渣漏出. 豆漿滾, 煮時會起泡沫,要取走. 用木鏟攪勻,否則會黐底煮燶. 滾後煮多兩分鐘,除去草青味.  將食用的熟石膏粉和粟粉加入碗,加三湯匙水, 攪勻粉水後加入另一個煲,再連隨將豆漿沖入煲內. 搇蓋. 靜止四十分鐘後,除去豆腐花面上的泡沫,漂亮的豆腐花便可以食了.

★ 紅豆沙 一 簡單做法 ★ | Red Bean Soup Easy Recipe

張媽媽紅豆沙,一款糖水店熱賣甜品.   MamaCheung's red bean soup, a very popular Chinese dessert, served in most dessert houses and restaurants.

材料:
三百克紅豆
兩磚片糖 
兩片果皮
二千四百毫升清水

Ingredients:
300g red bean
2 blocks of slab sugar
2 pieces of dried tangerine peel
2.4L water

做法:
開火煲水,加入兩片果皮,紅豆. 水滾後轉中小火,煮一小時二十分鐘 (如果用高速煲,煲半小時便可)煲腍紅豆之後才加糖,否則紅豆煲不腍.  煑腍紅豆之兩磚片糖(視乎你喜歡的甜度),煮溶片糖便完成了.  加上了少許椰漿,更加好味.

★ 冬瓜羹 一 簡單做法 ★ | Winter Melon Soup Easy Recipe

大家好,今日我介紹一個清熱消暑的食譜 <冬瓜羹>:





材料:
八隻中蝦切粒(用胡椒粉,麻油醃一醃)
一百二十克瘦肉切幼粒(用豉油,豆粉,糖,麻油醃一醃)
一百克草菇(出水後切粒)
浸發好的乾瑤柱,拆絲
一隻蛋,蛋白和蛋黃分開
一茶匙雞粉
鹽適量
一湯匙半馬蹄粉
一百毫克水
半條煮熟了的甘筍(切粒)
兩條蘆筍切薄片
一斤冬瓜
麻油 適量
芫茜(切幼粒)
蔥(切幼粒)

Ingredients:
8 Shrimps, diced (marintated with pepper and sesame oil)
120g lean pork, finely diced and marinated with soy sauce, starch, sugar and sesame oil)
100g straw mushrooms, diced
Rehydrated conpoy, shredded
1 egg, separate yolk from the egg
1 tsp chicken powder
Salt
1.5 tbsp Waterchestnut powder in 100ml water
1/2 Carrot, and boiled and chopped
2 Asparagus, finely sliced
600g Winter melon
Sesame oil
Finely chopped corriander and spring onion

將冬瓜切皮,切走冬瓜瓤,將冬瓜刨成幼絲, 將冬瓜蓉放入煲,加入八百毫升水,瑤柱絲冬瓜皮. 大火煲滾後轉中火,煲十五分鐘. 將冬瓜皮取出.放一湯殼湯攪開肉粒後放入煲, 煮滾後除去湯面的泡沫. 再加蝦粒,草菇粒,甘筍粒,蘆筍粒. 試味後,加入適量馬蹄粉水(視乎杰度), 加入蛋黃漿和蛋白,慢慢攪勻,熄火. 加入少量麻油,芫茜蔥粒.冬瓜羹便完成了.

材料:
梅頭肉,八分至一吋厚
甜椒粉兩湯匙
一個半湯匙生抽
半茶匙鹽
半茶匙雞粉
一茶匙糖
一茶匙五香粉
兩湯匙玫瑰露酒
一湯匙生油
六湯匙麥芽糖

Ingredients:
6 pieces of pork shoulder, 1 inch thick
2tbsp Paprika
1.5tbsp soy sauce
1/2 tsp salt
1/2 tsp chicken powder
1 tsp sugar
1 tsp five spice powder
2 tbsp Chinese rose wine
1 tbsp cooking oil
6 tbsp diluted maltose

做法:
將調味料放進大碗內撈勻,再放入豬肉, 醃四小時,醃得愈耐愈入味. 倒入生抽撈勻. 將豬肉放在盆上. 焗爐預熱十五分鐘後,將焗盆放入焗爐, 攝氏二百度火,焗二十分鐘. 將麥芽糖搽上叉燒兩面, 再焗三至四分鐘. 將焗爐轉烤程式烤四分鐘,烤至乾身後取出. 將焗盆的燒汁加上麥芽糖水,再搽上叉燒上,叉燒已經完成了.

材料:
一隻雞肶,去皮斬件
十克乾雲耳
二十克乾金針菜
三隻冬菇,切片
金華火腿片
四片薑,切絲

調味料:
一茶匙雞粉
紅蔥頭碎
一茶匙糖
半茶匙胡椒粉
一湯匙蠔油
兩茶匙薑汁
一個半湯匙生抽
一湯匙生粉
一茶匙麻油
一湯匙生油
 一湯匙玫瑰露

金針菜浸發好後除去硬莖,打結. 雲耳浸發好後除去硬莖,分開小片, 用薑水煮令它除去噏味. 將調味料醃雞,紅蔥頭碎,蠔油,一湯匙生抽,胡椒粉,生粉,一茶匙麻油, 一湯匙玫瑰露, 醃十五分鐘. 加入所有配料, 加半湯匙生抽,薑絲,將所有食材撈勻. 醃十分鐘,加一湯匙生油,撈勻,薑絲灑上面. 水滾後便用中大火蒸十二分鐘便熟了.

★ 沙嗲炒牛肉 一 簡單做法 ★ | Stir Fry Satay Beef Easy Recipe

材料:
二百五十克牛肉片
一湯匙生抽
一茶匙糖
一茶匙生粉
一茶匙雞粉
兩湯匙沙嗲
半個洋蔥切片
半個紅椒切片
三,四棵蔥切段
四粒蒜頭切片
一湯匙薑蓉
獻汁用一湯匙水加一茶匙生粉開
生油

將調味料倒入碗內醃牛肉,一茶匙糖和少許雞粉. 放入一湯匙水,令牛肉軟滑些,再放入一湯匙水加一茶匙生粉, 令牛肉更加軟滑. 當牛肉吸入生粉水後,加兩湯匙油,令牛肉炒時不會黐埋. 牛肉要醃三至四分鐘。燒熱鑊後放一湯匙油, 放入洋蔥,蒜片,紅椒,蔥白。取出備用。 再放一湯匙油,薑米炒香。撈一撈牛肉再放進鍋裡, 將牛肉鬆開,用大火煎完一面再反轉煎另外一面,煎約半分鐘, 加半茶匙老抽,令顏色鮮些,取出. 落兩茶匙生油後再放入沙嗲, 用中火爆香沙嗲,小心煮燶. 放入炒好的牛肉及蔬菜,兜炒, 加半茶匙糖,半茶匙雞粉,蔥,菠蘿, 加入生粉水埋芡,視乎杰道慢慢加. 如不夠鹹可加一點魚露,沙嗲炒牛肉完成了.

★ 電飯煲焗雞 一 簡單做法 ★ | Rice Cooker Chicken Easy Recipe

大家好,很多朋友家裡都有一個電飯煲,今日我介紹<飯煲焗雞>.

材料:
三斤重雞
三湯匙幼鹽
一茶匙沙薑粉
四粒紅蔥頭,切片
十片薑
兩安士紹興酒
兩安士玫瑰露
八顆蔥,切段
六至八人份量的飯煲

Ingredients:
1.8kg Chicken
3 tbsp table salt
1 tsp Galanga ginger powder
4 shallots, sliced
10 slices of ginger
2 oz Shaoxing wine
2 oz Chinese rose wine
8 spring onions, sliced
Rice cooker


做法:
雞 用幼鹽沙薑粉搽勻醃一晚. 蔥段,紅蔥頭,薑片放入飯煲. 紅蔥頭,薑片放進雞腔裏. 將雞放進飯煲內, 酒淋上雞,搇蓋. 按下飯煲制,當飯煲制彈起再焗多四十五分鐘. 用竹籤吉入雞髀,如有血水滲出,再按下飯煲制煮, 大約四十五至六十分鐘雞便熟透. 將雞搽上飯煲內的雞汁. 雞可以點雞汁或薑蓉.

Summary:
Marinade the chicken with salt and galanga ginger powder, leave overnight.  Place some ginger and shallots in the chicken cavity.  Place the spring onion, shallots and ginger into the rice cooker.  Place the chicken on top, pour wine over the chicken and cover with lid.  Press 'start' on the rice cooker, leave the chicken in the cooker for another 45 minutes after it stopped cooking.  Use a cocktail stick to pierce through the chicken thigh, if blood sips out, press the 'start' button again to cook for longer.  The total cooking time is between 45 minutes and 60 minutes.  Coat the chicken with gravy.

薑蓉材料:
一湯匙薑蓉
一湯匙蔥蓉
一茶匙蒜蓉
四分一茶匙五香粉
一茶匙鹽
四分一茶匙雞粉
一茶匙麻油
兩湯匙生油

薑蓉做法:
薑蓉, 蔥蓉, 蒜蓉, 五香粉, 雞粉, 麻油攪勻,  最後才加鹽後倒入油.

Ginger dipping sauce:
1tbsp grated ginger
1 tbso finely chopped scallion
1 tsp finely chopped garlic
1/4 tsp five spice powder
1 tsp salt
1tsp sesame oil
1/2 tsp chicken powder
2 tbsp cooking oil

Summary:
Apart from salt and cooking oil, place all the ingredients into a bowl.  Place the salt in immediately before pouring hot cooking oil into the bowl.
